Red Lentil Pasta w/ Pumpkin



  • 1 Cup Sprouted Salted Pumpkin Seeds
  • Pumpkin Pesto
  • 3/4 Cup Olive Oil
  • 1/4 Cup Lemon Juice
  • 1/2 Cup Parsley
  • 1/2 Cup Water
  • 1/2 Tsp. Sea Salt
  • Pasta, cook as instructed
  • 1 T Capers
  • 3 T Olive Oil
  • 1/2 Lemon
  • 3 Cups Arugula


Preparation Instructions

  1. Make pasta as directed on box.
  2. With a food processor, mix all pesto ingredients until a chunky paste is formed.
  3. Mix olive oil with pasta directly after cooking, then mix all other ingredients together when ready to serve, either over a bed of arugula or mixed in.
