Thai Curry Sweet Potato Greens



(Serves 2)

  • 1/3 Cup Thai Curry Superfood Nut Blend
  • 2 Cups Sweet Potato, cubed 1/2″
  • 3 Cups Spinach Greens
  • 1 Cup Garbanzo Beans
  • 2 T Olive Oil
  • 1 Tsp. Curry Spice Powder
  • A few pinches of sea salt


Preparation Instructions

  1. Cook sweet potatoes, over stovetop steamed (7-8 min) or roasted (375 for 25 min).
  2. Mix all ingredients in a bowl, when sweet potatoes are still hot to partially wilt the spinach, leaving aside the Thai Curry nuts.
  3. Serve immediately and sprinkle with Thai Curry Superfood Nut Blend.
